Apple Cake ‘Ku

Messy, splattered page

In my worn, homey cook book

Tells you, “This cake’s GOOD!”

Here’s the recipe

In case you like apple cake

From Betty Crocker.

Apple Cake

(This recipe is from my 1983 Betty Crocker’s Cookbook.)

Ingredients:

1 ½ cups sugar
1 cup vegetable oil
3 eggs
2 cups all-purpose flour (I use 1 cup white and 1 cup whole wheat flour.)
1 ½ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla
3 cups chopped tart apples (about 3 medium)
(1 cup coarsely chopped nuts – I omit this because my family doesn’t like the cake with nuts.)

Heat oven to 350 degrees. Grease and flour rectangular pan, 13x9x2 inches.
Mix sugar, oil and eggs until blended; beat 1 minute. Stir in remaining ingredients except apples (and nuts, if used); beat 1 minute. Stir in apples (and nuts). Pour into pan.
Bake until wooden pick inserted in center comes out clean, 35 to 45 minutes. Makes 15 servings.

How best to serve it?

We like it warm, with ice cream

Or next day, breakfast.
